Vanilla is a spice that is obtained from the capsules of various types of vanilla. Vanilla first came to Europe from Mexico around 1800. Today, vanilla is grown on plantations. During harvesting, the vanilla pods are dried so that their colour changes from green to the brown shade we are familiar with. The oily seeds contain the most flavour, but the delicious vanilla flavour can also be extracted by boiling the pods.
