Vanilla is a spice extracted from the pods of various vanilla species. Vanilla first arrived in Europe from Mexico around 1800. Today, vanilla is grown on plantations. During harvest, the vanilla pods are dried, changing their color from green to the familiar brown. The oily seeds contain the most aroma, but the delicious vanilla flavor can also be extracted by boiling the pods.
